The fryer cooks food in stages. In the first phase, the oil is heated to a high temperature before you add the food. Then, the hot oil evaporates the moisture in the food and cooks the food at the same time. The food is done when all the water has evaporated and the bubbles have disappeared.
Although this is how every deep fryer works, there may be slight differences depending on the type of deep fryer.

How does a fryer work?
Deep frying is a process in which food is cooked in hot oil at temperatures between 325°F and 400°F.
At this temperature, the food cooks and develops a crispy exterior. Technically, there are four stages to this process.
Heating: When you turn on the appliance, the oil in the container begins to heat up. Once the oil has reached the right temperature, you can add the food to the basket and place it in the oil. The sudden exposure to heat will immediately cook the outer surface of the food. Meanwhile, the contents are still uncooked. The crisp outer coating seals in the moisture inside the food.

Surface boiling: During the second phase, the oil is still hot, causing the moisture inside the raw food to evaporate. As the water evaporates, it boils the contents of the food. At this point, you will notice bubbles on the surface of the food. They form when the evaporated water touches the hot oil. These bubbles prevent the oil from penetrating the food.
Reduce heat: As the food cooks, water evaporates. The bubbles on the surface will also begin to disappear.
Disappearing bubbles: When the bubbles disappear, it means that all the moisture in the food has evaporated and it is properly cooked. Now you need to remove the food from the machine. If you leave it for too long, it will start to absorb oil because the bubble shield is no longer there.
