How to use a fryer safely?
You can prepare a variety of delicious foods with a fryer, such as chicken, turkey, donuts, potatoes, onion rings, and more.
Although these items are often purchased for restaurants, the fryer has also become popular for home cooking.
However, deep frying in hot oil can be very dangerous. Hot oil can burn people and cause fires. If food is not cooked to a safe temperature, it can lead to foodborne illness.
The information below provides important guidelines to help prevent injuries from air fryers at home and ensure food is cooked to safe temperatures.

What is deep frying?
Deep frying is a cooking method that can be used to prepare foods such as fried chicken, French fries, and potato chips.
The process involves immersing food in extremely hot oil until it reaches a safe minimum internal temperature. When the food is well-fried, it will be hot and crispy on the outside and safely cooked in the center. Deep frying is very fast and, if done correctly, kills bacteria.
Danger of deep frying
When deep frying, the oil temperature can reach over 400 degrees F. Extreme safety precautions must be taken when cooking at these temperatures to avoid burning yourself or starting a fire. Like other oils, cooking oil is a highly flammable liquid. To prevent scalding and house fires, avoid exposing the oil to direct flames. Because of this hazard, it is recommended to have a kitchen fire extinguisher available when deep frying.
Water is a very dangerous liquid when deep frying. When water comes into contact with very hot oil, it instantly vaporizes and turns into superheated steam. It expands rapidly, which can cause the oil to spill and pose a risk of injury. Do not allow water to enter hot oil, and do not use water to cool it.

What kind of oil is recommended?
All oils have a <smoke point> at a specific temperature. At the smoke point, the oil begins to break down and may have an unpleasant odor or taste.
The following oils have a high <smoke point> and are recommended for use with a fryer: olive, peanut, canola, corn, grapeseed, safflower, sunflower, and vegetable oil.
Each oil has a unique flavor, but all of them are safe to use for deep frying.
